Miso salmon with edamame

I was in the mood for salmon, but I wanted to tweak it a bit. I’ve done salmon with honey and sesame way too many times. I did a Google search for salmon and edamame and this recipe came up… miso salmon with edamame. YES. (So what if it’s from Oprah’s magazine - who doesn’t love Oprah??)

It wasn’t too fussy. Actually, it was super easy. Look at those grill marks! Thank you Mario Batali cast-iron grill pan.

The result was de.lic.ious. Miso = my new best friend.

Sweet, it’s a pumpkin

After seeing a similar cupcake on Martha Stewart, I decided to try it at home. Having never used marzipan before and not owning “premium” gel food colouring put me at a disadvantage. I think they turned out ok.

Dagens Muffin is “Sweden’s greatest website about muffins.” Wow.

More than 500 recipes. (English version coming soon. Swedish, French and Finnish versions are up and running.) I’m keen to try the “olivmuffins” featured above. I’ll just keep my online Swedish-English translator open. I found it easiest to search for entries with photos.

3 cups flour
3/4 tsp. cream of tartar
1 tsp. salt
4 1/2 tsp. baking powder
2 1/2 Tbsp. sugar

cut in 3/4 cup shortening (I used Fluffo)
1 cup milk

Divide and bake for 15 minutes (approximately) at 325F or until golden. Mmmm.

Mango Salsa

Has your mint plant taken over? Try this mango salsa recipe from Epicurean:

Ingredients (Pictured above is half recipe):
2 ripe mangos — peeled and chopped
3 green onions — finely chopped
1/2 cup chopped mint
11/2 tablespoons lime juice
Freshly ground black pepper

Directions:
Combine all ingredients. Process until smooth.
Set aside for a minimum of 15 minutes before serving at room temperature.
Keeps well, covered and refrigerated up to a day.
Makes up to 11/2 cups.
